It’s freezing out, you’re stuck inside, and you’re hungry. Sounds like the perfect time to cook up with Aguadito de Pollo – Peruvian Chicken Soup.

Think of the standard Chicken Noodle Soup you would get from a Campbell’s soup can, but much, much better. This soup has the sweetness of the corn, the starchiness of the potatoes, the fresh, herbal smell of the cilantro, and the wonderful rich soup base from the chicken. Mix all of that with a cup of softly cooked rice, and you’ll be all set for a night in, tucked under the blankets and away from the chilling cold. I’m telling you, this is the ideal winter soup recipe you’ll want to make every day!


4 skinless, boneless chicken breasts, cut & quartered
1/2 cup olive oil
1 medium onion
1 teaspoon minced garlic
1 tablespoon seeded, minced serrano chile
1/2 cup chopped cilantro
1 cup corn
1/2 red bell pepper
10 cups chicken broth
4 quartered Yukon gold potatoes
1 cup uncooked rice

You will need:

A large pot
Cutting knife
